Chicken Pizza With Mozzarella and Parmesan

There are so many delicious pizza recipes out there; sometimes it can be difficult to choose which one to make. When trying to please picky eaters, a basic pepperoni pizza Battersea or plain cheese pizza Fulham can be a good choice. Whether cooking for children or entertaining more sophisticated palates, one of my favourites is a chicken pizza Wandsworth with mozzarella and parmesan cheeses. Once you’ve tried this recipe, I am sure you will agree that it is a delicious change from pork-laden pizzas.

Cook time: 10 Minutes
Yield: 1 pizza
For this recipe you will need:
1 recipe basic pizza dough
1 recipe pizza sauce

100g/3.5 oz. shredded buffalo mozzarella (it’s all right to use regular mozzarella if you can’t find the buffalo variety)

Large chicken breast, cooked and sliced thin
115g/4 oz. grated parmesan
5 or 6 fresh leaves of basil, chopped or shredded, plus a couple extra for garnish
Set the oven to 200 degrees Celsius/392 Fahrenheit and put a pizza tray or stone in to preheat. Using your knuckles, punch down the dough then turn it out onto a floured work surface. Knead the dough for 2 to 3 minutes to work out any air bubbles. With a rolling pin, roll the dough into a large circle, about 30 cm in diameter.
Cover the pizza base with sauce, spreading evenly but leaving a narrow margin around the edges. Distribute the chicken over the pizza then sprinkle the mozzarella and parmesan cheeses on top. Scatter the chopped fresh basil over the cheese.
Take the hot pizza tray or stone out of the oven and carefully put the pizza on it. Bake the pizza until the cheese melts and the crust is golden-brown, about 10 minutes. Use the extra basil leaves as garnish and serve.
Chicken pizzas often involve garlic sauce, which many adults find delicious, but most children do not appreciate. The beauty of this chicken pizza Wandsworth is in its simplicity. It uses basic tomato-based pizza sauce and has very few toppings, making it pretty quick to prepare. If you’re often in a hurry but don’t want to settle for frozen pizza, consider making your sauce ahead of time and storing it in the freezer. You can do the same with pizza bases, pre-baking and then freezing them for future use. It’s nearly as convenient as getting a frozen pizza from the local grocery and you can still enjoy that delicious homemade taste and feel better about the ingredients.
